Mmmm... Lentil Beet Burgers

Yeah, I said beets.  I've never cooked with beets before but I keep seeing people buy them at the farmers' market.  There's gotta be a reason people are going all Dwight Schrute with their veggies, right?  So I joined the crowd and purchased my very first beets.

Now, what to do with these bad boys?  As you know, we had company over for dinner last week.  The weather was hot.  That means we should definitely grill out.  Burgers and fries it is.

I Googled "beet burgers" and scrolled through lots of different recipes... and some reviews that said beet burgers were quite possibly the worst idea ever.  I ended up choosing this recipe because it looked pretty simple, I had all the ingredients, and it called for lentils.  You know how much I love lentils.

The beets were surprisingly easy to work with.  I just roasted them up, chopped them up, and made burgers.  All without getting a smidge of pink on my dress.

Are we a bit skeptical?
The recipe calls for you to cook the burgers in a skillet, but I thought they'd hold up on the grill.  Just to be safe, I put down some foil to keep the burgers from sticking to the grill or falling through.  Have you seen those commercials?  You know, where the burgers stick and dinner is ruined and they're all, "This wouldn't have happened if you would have used Reynold's Wrap!"  Yes, I am a marketer's dream come true.  I believe everything I see on TV.

And Drew became more and more skeptical about the beet burgers.  If you want my honest opinion, I think he was rooting for the beet burgers to fail from the beginning.

Drew decided the burgers weren't going to make it on the grill, so we brought them in and finished them up on the stove... much to his delight.  I think he was hoping we'd scratch the beet burgers and go to Chipotle.  You wish, Drew.

To go with the burgers and fries I whipped up some Mmmm Sauce from Peas & Thankyou, my newest blog obsession.  I love this sauce.  I mean, I love sauce in general, but this stuff is super good.  I've eaten the entire batch.  It goes on fries, burgers, salad, pasta, crackers, pita, and anything else you can think of.  I licked the bowl.  I like it.

Jana enjoyed the Mmmm sauce too.  DeAnna didn't think it lived up to the hype.  I'll go ahead and eat hers.

 The burgers turned out pretty good.  Jana and DeAnna agreed.  I don't know if they were just being nice... or if they'd just had enough sangria to make a hot pink burger seem yummy.

And, now let's get an opinion from someone who won't lie to avoid hurting my feelings and isn't suffering from sangria-induced impaired judgement.  To put it mildly, Drew was not a fan.

He took one bite and called it quits.  He talked about going out for food, but never actually did.  It's probably a good thing.  After sitting through us girls going through several pitchers of sangria, I don't know if he would have come back.

So refreshing, yet so wrong.
Here's the recipe, in case you haven't been scared off yet.

Lentil Beet Burgers

Ingredients:
  • 2/3 c. quick cooking wheat bulgur (soaked in water for 4-6 hours)
  • 3/4 c. dry red lentils (soaked in water for 4-6 hours)
  • 2/3 c. raw cashews (blended into a powder)
  • 2 cups beets, washed
  • 8 oz. white mushrooms, sliced
  • 1.5 tsp. sea salt
  • 4 Tbsp. olive oil
Method:
  • Preheat oven to 450 degrees.
  • Place the beets in a 9 x 13 pan, add a cup or so of water and cover it with foil and bake the beets for about 45-60 minutes or until very tender. 
  • Allow beets to cool slightly, then peel off skin and discard the root.
  • Dice the beets and set aside.
  • In a skillet, heat 2 Tbsp. of the olive oil and saute the mushrooms over medium-high heat until cooked.
  • In a food processor, pulse the cashews into a medium fine powder.
  • Add the beets, sauteed mushrooms, lentils, bulgur, and sea salt and blend until combined.
  • Form mixture into 8 burger patties. Place them on a tray lined with wax paper and refrigerate them for 1-2 hours before cooking.
  • When ready to cook the burgers, heat remaining 2 Tbsp. olive oil in a skillet or griddle on medium high heat. Cook burgers for about 5 minutes on each side, but try not flip more than once to avoid burgers falling apart.
  • Serve on grilled sourdough bread or buns with your favorite toppings!

Happily Ever After

Wedding season continued this weekend with my lovely friend Melinda marrying one of the nicest/coolest/awesomest guys I know.  This was by far one of the most unique and beautiful weddings I've ever been to.  The entire evening was a perfect picture of what a fun-loving couple Nick & Melinda are.

I chose a terrible location for picture taking at the outdoor ceremony.  I'm pretty sure I was leaning and sweating all over the gal sitting next to me, trying to get a good shot.  I have no shame.

Hmmm... what else did I miss?  Well, their was a huge pitcher of sangria at the bar.  How do you think that made me feel?  Good.  Yes.  Very good.  Drew was super pleased at the buffet which included sliders and crab rangoon.  The decorations were fab.  There was a live band during the ceremony.  I'm pretty sure there is a music video being made and I sure can't wait to see it.  Melissa wrote a hilarious yet thoughtful poem for her maid of honor speech.  Also, the ultimate good time at a wedding: the photo booth.  Always fun.

All in all, the wedding was absolutely fantastic.  Every detail reflected the couple's personalities and they did an amazing job of really making the guests a part of the celebration.

Vegan Peach Pie

About a week ago, I got a hankering to make pie.  No specific pie... I just really wanted to make pie.  I was at my mom's house and she had Food Network on.  I always have Food Network on too.  Maybe this is hereditary?  The Neelys caught my eye when I saw they were making a Peach Crumb Pie.  Now tell me that doesn't sound fantastic.

The Vegan and the Coach's Wife came over for dinner this week, so I thought it would be the perfect time to make pie.  Come on, we know if I made a pie with no company coming over I'd eat that whole dang thing myself... minus the one piece Drew would eat.  The only thing I had to do now was veganize the pie. 

This turned out to be super easy because the only animal product called for in the recipe was butter.  I just subbed Earth Balance and called it a day.  The Neelys used a store-bought pie crust, but I made my own vegan version.

It wasn't the best peach pie ever made.  My peaches weren't super ripe and the crust was a bit crunchy.  Plus, I'm totally a pie novice.  But for a vegan dessert, I think it turned out pretty nice.

Drew's response was "meh."  But these girls seemed to enjoy the pie... although it may have been due to the large quantities of sangria already consumed.

I made a comment about how I thought pie crust was kind of an art, and Jana smacked me down by saying, "My eigth graders can make it."  Noted.  Now I know when Jana talks about her eigth grade cooking skills that those are some pretty advanced eigth graders.  At least in my book.

Vegan Peach Crumb Pie

Ingredients:

Filling:

  • 5 large, ripe but firm peaches, peeled, pitted and sliced (3 pounds)
  • 3/4 cup sugar (I used 1/2 cup)
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup cornstarch
  • Juice of 1/2 lemon

Topping:

  • 1/4 cup all-purpose flour
  • 1/4 cup packed light brown sugar
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon allspice
  • Pinch salt
  • 4 tablespoons unsalted butter Earth Balance, cut into small cubes
  • 1/3 cup sliced almonds

Pie:

Method:

  • Heat the oven to 375 degrees F.
  • To make the filling: In a large bowl, combine the peaches, sugar, and cinnamon. Add the cornstarch to a small bowl and whisk in the lemon juice so no lumps remain (I used the juice of a whole lemon and then still needed to add some cold water to thin out the cornstarch). Pour the cornstarch mixture over the peaches and toss. Let the peaches sit for 15 minutes while you roll out the pie dough and make the streusel topping.
  • To make the topping: Mix the flour, brown sugar, cinnamon, allspice, and salt in a large bowl. Blend the butter Earth Balance into the mixture with your fingers until it forms pea-size lumps and looks crumbly (the Earth Balance totally melted and the mixture was more of a paste, but it still baked up crumbly). Stir in the almonds.
  • To assemble: Roll out the dough an extra inch on a lightly-floured surface. Place the dough in the bottom of a 9-inch pie pan. Crimp edges as desired.
  • Pour the pie filling into the pie shell and sprinkle the streusel topping over the pie. Dot the top with sliced butter Earth Balance. Bake for 45 to 50 minutes. Remove from the oven and let cool before serving.
You're sure to make lots of vegan friends with this pie!  But don't expect your husband to jump for joy.
