Happy St. Patrick's Day!!!
I'm Irish. And very proud of it. Giving up my maiden name was one of the hardest things ever. I loved being a McNiece. So Irish.
Anyways, I'm here today to tell you a story of Irish pride, and how it can get you into trouble.
There I was, in a bar in Spain, with my other favorite McNiece. I'd had a bit too much to drink and was happily (loudly) telling some Spaniards about being Irish. Being bolstered by the cervezas, I made some pretty wild claims. I told them (loudly) that on a scale of 1 to 10 of how Irish a person could be, with 1 being a Spanish midget and 10 being St. Patrick himself, I was an eleven. That's right, I'm more Irish than St. Patrick.
While all of this is going on, two actual Irish gals (like they were born in Ireland and lived there, not just had a last name that started with Mc) were sitting at the bar a few feet away from us. Apparently they didn't like my (loud) ranting and claims of being Irish. I guess maybe its offensive to claim to be more Irish than St. Patrick? Anyways, they were not happy with me.
Somehow Jess got me out of the bar unscathed. But I hope this serves as a cautionary tale. Go out and be Irish today, but watch out for any real Irish folk. They might not find you as charming as a four-leaf clover. And for goodness sake, please don't compare yourself to St. Patrick... or a Spanish midget for that matter.

Vocab Lesson
I'm taking a class right now called Content Area Literacy. It focuses on improving reading skills in students in all classes, not just English. I've been really surprised at how much I enjoy the class and how much it has affected the way I read and study.
A big emphasis in the class is on vocabulary. I've been trying to pay more attention to vocabulary that I don't know when I'm reading. Rather than just skip over words I don't fully understand, I look them up. Or at least right them down to look up later. Dictionary.com is always up on my computer*.
So there I was, working on a class project, and toggling back and forth to my email (and Facebook... and your blogs... I have ADD) when I see that I got an email from Sarah. Remember, I'm in vocab-mode. Sarah used the phrase, "Here's the sitch..." and I was all, "I've never seen that word, sitch. I'll look it up!"
Type type type into dictionary.com... and alas... there is the definition.
Sitch: n. situation
Okay, major blonde moment. That's like when I say whatevs or obvs. Glad I had to look that up in the dictionary. Better yet was the example sentence that was given to me;
Sitch: (Streets.) : You in one bad sitch, bitch!
Stop it. Dictionary.com just cursed at me.
This is obviously (obvs) my new favorite (fave) phrase and I've been saying it all day. Mostly to Mya**. She's the only one who I can legitimately call a b*tch.
Try it out. It feels really good, especially if you elicit*** your ghetto-girl voice.
Mya, you in one bad sitch, bitch!

Love Them Lentils
Lentils... not just for soup anymore. And on this super fabulous Meatless Monday I have two, two, lentil recipes for you.
I was really intrigued when I heard about lentil salad. I love egg salad, and I used to eat the heck out of some chicken salad, so I thought I'd give lentil salad a go.
Lentils have a very distinctive taste. They taste... earthy. Is that the right word? I think it is. So, you have to be into that kind of thing to enjoy this salad.
Mediterranean Lentil Salad
Ingredients:
So there I was, icing my knees after my 20-miler (!!!) on Saturday, watching some Cooking Channel. How awesome is the Cooking Channel? It's like all these fun shows that probably aren't popular enough to show on the Food Network. But they are so fun!
The show that happened to be on while I was icing was Spice Goddess. And what was she making? Lentil Cookies! My post-long-run-appetite was kicking in and I immediately decided to try these out. I mean, who has ever heard of lentil cookies???
Bal's Lentil Cookies
Ingredients:

Mediterranean Lentil Salad
Ingredients:
- 1 cup dry brown lentils
- 1 cup diced carrots
- 1 cup red onion, diced
- 2 cloves garlic, minced
- 1 bay leaf
- 1/2 teaspoon dried thyme
- 2 tablespoons lemon juice
- 1/2 cup diced celery
- 1/4 cup chopped parsley
- 1 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1/4 cup olive oil
- In a saucepan combine lentils, carrots, onion, garlic, bay leaf, and thyme. Add enough water to cover by 1 inch. Bring to boil, reduce heat and simmer uncovered for 15 to 20 minutes or until lentils are tender but not mushy.
- Drain lentils and vegetables and remove bay leaf. Add olive oil, lemon juice, celery, parsley, salt and pepper. Toss to mix and serve at room temperature.

Bal's Lentil Cookies
Ingredients:
- 1 cup mixed lentils
- 1 cup (2 sticks) butter, softened
- 1 cup brown sugar
- 1 egg
- 1 cup whole wheat flour
- 1 teaspoon baking soda
- 1 teaspoon vanilla
- 1 cup quick rolled oats
- 1 cup slivered almonds (I used a combo of 1/2 cup chopped almonds and 1/2 cup chopped walnuts)
- 1 cup pumpkin seeds (I used 1/3 cup each of pumpkin seeds, chia seeds, and sunflower seeds)
- 1 cup chocolate chips
- Cook lentils in boiling water for 35 minutes (I only cooked mine for 20 minutes). Strain the lentils and crush with a fork.
- Preheat the oven to 375 degrees. Grease a cookie sheet or line a cookie sheet with parchment.
- In a bowl, cream the crushed cooked lentils, butter, and brown sugar together and then add the egg and blend. Add the flour, baking soda, and vanilla. Stir in the oats, nuts, seeds, and chocolate chips and mix well.
- Drop the cookies by the spoonful onto the prepared baking sheet and flatten. Bake the cookies for 13 to 18 minutes and allow to cool on a baking rack.

Especially for us non-meat-eaters, it is really important to eat a variety of foods. Nuts and seeds are a great source of nutrition, including non-animal protein. So I like to think of these cookies as a healthy part of my diet... despite all the butter, sugar, and chocolate chips. :)
Oh, and Drew loves these too! See? Man food.
